Roasted Cauliflower with Zesty Dipping Sauce

Don’t you love a healthy recipe that is bursting with flavor?!  Let me just tell you something!  This chili roasted cauliflower is like finding a good bag of chips that you just can’t stop eating, with one MAJOR exception… is healthy, packed with nutrients and I even got BOTH of my children to eat it!  Even without the dipping sauce it is delicious, but the zesty fat free sauce just gives the flavor of the cauliflower that extra punch.  It is easy to make and sure to please.  You could serve it as a side dish or set it out for a pre-meal snack.  Either way, make it…..soon!

Roasted Cauliflower with Zesty Dipping Sauce

Cook Time: 25 minutes

Total Time: 35 minutes

Yield: 4-6 servings

Roasted Cauliflower with Zesty Dipping Sauce

A healthy and delicious side dish or snack.


  • 1 head organic cauliflower, cut into bite size florets
  • 2-3 tablespoons extra virgin olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon Kosher salt
  • 1/8 teaspoon black pepper
  • For the Dipping Sauce
  • 1/2 cup organic non-fat plain Greek yogurt
  • 2 tablespoons prepared mild salsa (I used On the Border mild salsa
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon fresh lime juice
  • salt to taste


  1. Heat oven to 500 degrees F. Cut cauliflower into bite-size florets. Dry well. Line a baking sheet with aluminum foil and spray with cooking spray. Place cauliflower on baking sheet. Drizzle with olive oil and toss to coat. Combine garlic salt, cumin, chili powder, pepper and salt. Sprinkle over cauliflower and toss to coat.
  2. Roast in preheated oven for 20 - 25 minutes or until dark and golden brown. Stir cauliflower at least two times during baking for even cooking. Serve warm with dipping sauce.

  4. In a small bowl, combine all ingredients. Adjust seasoning to taste.
