Mint & Basil Orzo with Honey Roasted Tomatoes

That moment when you are recipe creating and it just comes together in a beautiful bite on a fork in your mouth and you let out a Giada -like “mmmmm, that’s good”…..  I had a few hours of quiet last weekend and of course I used them to get in the kitchen and cook!  Those cluttered bathroom drawers and cabinets can wait another weekend.  For me, my time in the kitchen is therapeutic and definitely much needed with our busy life.  After a long week at work, it is necessary for me to get creative time to simply cook food.  To be totally honest with you, we had a family get together later that day and I really didn’t want to go to the store, but needed to bring a side dish, so after I scavenged through the pantry and herb garden, this is what i came up with!  And in my personal opinion, SUCCESS!

Mint & Basil Orzo with Honey Roasted Tomatoes


  • 1 cup orzo
  • 2 quarts water
  • 1 teaspoon chicken granules
  • 1/4 cup fresh mint, chopped
  • 1/4 cup fresh basil, chopped
  • 1/2 cup onion, chopped
  • 2 tablespoons butter, melted
  • Honey Roasted Tomatoes
  • For the Tomatoes
  • 1 pint sweet yellow cherry tomatoes
  • 2 garlic cloves, crushed (I used caramelized roasted garlic)
  • 1 tablespoon agave
  • 3 tablespoons olive oil
  • Flaky sea salt & fresh ground black pepper


  1. Bring 2 quarts water with chicken granules to a rapid boil. Add orzo and cook until al dente (about 8-10 minutes), rinse and drain. Combine orzo, mint, basil, onions, and melted butter. Stir to combine. Add Honey Roasted Tomatoes and any juices from the baking pan and stir to combine.
  2. For the Honey Roasted Tomatoes
  3. Preheat the oven to 375 degrees F. Lightly oil a shallow roasting pan. In a bowl, toss the tomatoes with the honey, olive oil, and garlic. Place on roasting pan close together, so that they are snugly fit next to each other.
  4. Roast for about 30 minutes until juicy and bubbling.
