Grilled Lime Shrimp with Zesty Dipping Sauce

Remember that yummy roasted cauliflower post?  I figured you did, well the zesty dipping sauce worked double time for that meal also making a tasty accompaniment to grilled lime shrimp.  Now that we have our outdoor kitchen, grilling has never been so much fun.  Grilling shrimp is so quick and easy that even Baker doesn’t have a chance to get away before they’re done.  Well, that’s not true, because he’s lightning fast, but grilling shrimp is pretty darn quick and makes it super easy to make on a busy night or fast weekend meal.

Grilled Lime Shrimp with Zesty Dipping Sauce

Ingredients

  • 1 pound medium to raw large shrimp, peeled and de-veined
  • 1/2 teaspoon cumin
  • 1/2 teaspoon Kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon garlic powder
  • 2-3 tablespoons fresh lime juice
  • 2 tablespoons Extra Virgin Olive Oil
  • For the Dipping Sauce
  • 1/2 cup organic non-fat plain Greek yogurt
  • 2 tablespoons prepared mild salsa (I used On the Border mild salsa
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon fresh lime juice
  • salt to taste

Instructions

  1. Combine olive oil, lime juice, cumin, salt, pepper and garlic powder in a bowl. Place shrimp in a quart size bag. Pour marinade over shrimp and shake to coat. Skewer shrimp on metal or bamboo grilling skewers.
  2. Heat grill over medium-high heat. Place shrimp on a piece of non-stick aluminum foil. Grill 2-3 minutes per side or until no longer opaque. Serve with Zesty Dipping Sauce.
  3. For the Dipping Sauce
  4. In a small bowl, combine all ingredients. Adjust seasoning to taste.
