Grilled Tomatoes with Feta & Dill

In honor of yesterday’s Tomato Art Festival, which is undoubtedly our favorite day of the year in Nashville, I present to you this amazingly simple and insanely delicious grilled tomato recipe.  I may be wrong, but I really think this would make a tomato lover out of any naysayer.  I served this dish with herb encrusted grilled pork tenderloin and it was like a garden fresh explosion of goodness.  Go ahead….make this dish…..you can thank me later!  VIVA, Tomato!

Grilled Tomatoes with Feta & Dill

Prep Time: 5 minutes

Cook Time: 5 minutes

Total Time: 10 minutes

Yield: 4 servings

Grilled Tomatoes with Feta & Dill

The most delicious grilled tomato recipe with very few ingredients to enhance the flavor of fruit.

Ingredients

  • 1 pint heirloom cherry tomatoes
  • 2 teaspoons good quality extra virgin olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/2 cup reduced fat crumbled Feta cheese
  • 1-2 teaspoons fresh dill

Instructions

  1. Cut tomatoes in half. Toss with olive oil, salt & pepper. Place on a sheet of nonstick aluminum foil. Heat the grill over medium heat. Place foil with tomatoes on grill. Toss tomatoes after about 1-2 minutes. Grill about 2-3 minutes more. Remove from grill and place on a serving dish. Top with Feta and dill.
