Super Bowl Sunday at our house is never a big party or throw down.  Drew is usually most content sitting on the couch in our living room watching the game people free.  I usually like to be around friends, because unless the Titans are playing I really don’t care all that much about the game.  This last Super Bowl was an especially cold and rainy day in Nashville and it made our decision to stay in so much easier!  Plus dragging the kids out kind of seemed like torture, so we were quite happy to be at the house.

Early that morning I was inspired by the unmatched Ina Garten of Barefoot Contessa as she was making Tequila Lime Chicken.  I immediately headed to the kitchen to pull that together since it needs to marinate overnight, but since it was 6 a.m. there was plenty of time for the bird to soak before grilling it later that afternoon.  Once we got started cooking for our football fest, I realized that I hadn’t really thought out a side.  At that point I had zero interest in going to the store, so I took inventory of what I had in the pantry and in the fridge and after seeing the Jasmine rice thought some sort of spicy-style rice would be perfect.  The chicken and rice was a perfect combo and well-received by all my teammates!

Easy Homemade Spanish Rice


  • 2 tablespoons olive oil
  • 1 small yellow onion, chopped
  • 1 garlic clove minced
  • 2 cups Jasmine rice
  • 4 cups chicken broth
  • 1 cup Red Gold Chili Ready Diced Tomatoes
  • 1/8 teaspoon oregano
  • 1 teaspoon salt


  1. In a large skillet over medium heat, heat olive oil. Add the rice to the pan and toss to coat with oil. Cook rice in skillet, stirring often until most of the rice has browned. Add the onion and garlic, and saute with rice another 3 minutes.
  2. While the rice is cooking, in a large pot over medium/high heat, bring chicken brother, diced tomatoes, oregano and salt to a simmer. Add rice mixture to broth. Bring back to a simmer and reduce heat to low. Cover and cook 15-20 minutes or until broth has been absorbed. Remove from heat and let sit for about 5 minutes. Fluff with a fork and serve.
