Kale, Sausage & Spring Onion Frittata

It’s Sunday and that means it’s my favorite food day of the week, because I love a good Sunday brunch!  While today I am treating myself to a moms only Sunday brunch away from my kitchen where brunch is prepared for me and I am served and may or may not have a sparkly beverage along with it, I wanted to share this delicious frittata with you that is perfect for your home cooked Sunday brunch and would also make a great Thanksgiving morning breakfast.

Kale, Sausage & Spring Onion Frittata


  • 4 farm fresh eggs
  • 4 egg whites
  • 1/4 cup Asiago or Parmesan cheese, shredded
  • 1/2 bunch kale (about 4 cups), washed well
  • 1 pound spring onions, trimmed and sliced thin
  • 1 cup Jimmy Dean Turkey Fully Cooked Sausage Crumbles
  • 2 tablespoons canola oil, divided
  • pinch of salt and fresh pepper to taste


  1. Preheat oven to 400°.
  2. In a bowl combine eggs, egg whites, sausage and cheese. Salt and pepper to taste. Set aside.
  3. Remove the stems from the kale then cut the leaves into thin 1/8th inch strips.
  4. Heat a 10-inch skillet on low heat; add 1 tablespoon Canola oil, then add the onions. Slowly cook the onions, stirring occasionally until the onions become translucent, about 5 to 6 minutes. Bring the heat up to medium and cook until the onions caramelize. Set aside on a dish.
  5. Add the remaining 1 tbsp Canola Oil and kale and sauté until wilted, about 4 to 5 minutes. Season with salt and pepper.
  6. Reduce heat to low; add egg mixture and onions into the skillet, mix well to blend. Reduce heat to low and cook until the edges set, about 6 to 8 minutes. Once the bottom and edges set, place in the oven and bake until completely set through, about 8 minutes.
  7. Cut into wedges and serve.
