Alright it’s Saturday and I think that means CSA pickup day!! You may be getting the last of the strawberry harvest and if you really want to please your family and certainly your own palate, then you will definitely want to make this super easy and delicious Strawberry Sorbet.
I don’t have an ice cream maker and I what I love most about this recipe is that you can simply freeze it with a minimal amount of work and get the same tasty sorbet and the best part is this frozen dessert comes in at less than 150 calories! Quick, easy, light and healthy……I’ll take it!
- 1 pound fresh strawberries, trimmed
- 1 tablespoon lime juice
- 1 cup water
- 3/4 cup sugar
- After trimming strawberries, halve strawberries and place in the bowl of a food processor. Add lime juice and pulse until smooth.
- In a medium saucepan over medium to high heat, combine water and sugar. Bring to a boil and let simmer 5 minutes without stirring. Remove from heat and let cool.
- Add sugar syrup to strawberry puree and pulse just to combine. Pour mixture into a glass 8x8 dish and place in freezer. Stir mixture every 30 minutes for 2 hours. Scoop sorbet into a freezer safe container and keep frozen until ready to use. Will keep for one month.
