Strawberry Sorbet

  • 1 pound fresh strawberries, trimmed
  • 1 tablespoon lime juice
  • 1 cup water
  • 3/4 cup sugar

  1. After trimming strawberries, halve strawberries and place in the bowl of a food processor. Add lime juice and pulse until smooth.
  2. In a medium saucepan over medium to high heat, combine water and sugar. Bring to a boil and let simmer 5 minutes without stirring. Remove from heat and let cool.
  3. Add sugar syrup to strawberry puree and pulse just to combine. Pour mixture into a glass 8x8 dish and place in freezer. Stir mixture every 30 minutes for 2 hours. Scoop sorbet into a freezer safe container and keep frozen until ready to use. Will keep for one month.
