Bacon & Ranch Twice Baked Potatoes

Cold spaghetti, cold spaghetti……Okay, okay, I’ll stop, but I bet you already hate my guts if you have any clue what this song is or the annoying, colorful little men who sing it.

I love twice baked potatoes, but they can be a little heavy.  Since I made a truly manly meal for Drew for Father’s Day of steak and scallops, I couldn’t hardly leave out the potato of the steak and potato dinner.  Since I, too, had to eat the heavy meal, I decided to lighten it up a little bit by replacing the usual butter and cream with reduced fat milk, some scallions for crunch, and Heluva Good! Bacon Ranch Sour Cream Dip.  SOOOOOO TASTY!!!!

Bacon & Ranch Twice Baked Potatoes

Prep Time: 15 minutes

Cook Time: 2 hours

Total Time: 2 hours, 15 minutes

Yield: 4 potatoes

Serving Size: 1 potato

Bacon & Ranch Twice Baked Potatoes

Ingredients

Instructions

  1. Preheat oven to 400 degrees F. Wash and scrub potatoes. Using a fork, poke holes in potatoes around circumference of potato. Rub each potato with a small amount of olive oil. Place directly on oven rack. Cook potatoes about 1 hour and 15 minutes or until cooked through.
  2. Remove potatoes from oven and let cool. Reduce oven to 350 degrees F. Cut top 1/3 of potato lengthwise and reserve. Keeping about a 1/4" edge on the inside of the potato, scoop out the center of the potato and place in a bowl. Scoop out the inside of the top 1/3 of the potato and add to the potato mixture. Using a potato masher, mash potato in bowl with milk and sour cream until smooth. Add scallions, salt & pepper to taste.
  3. Lightly spray a glass baking dish with cooking spray. Place potatoes in dish and top with cheese. Place in oven at 350 degrees F and bake 15-20 minutes or until heated through.
