Lobster Salad with Umatcha Green Tea Citrus Dressing

Anyone who knows me knows that I LOVE me some diet coke!! Too much and I know that I have admitted that I am, in fact, addicted to the stuff! That being said, when I was asked to become a member of The Republic of Tea‘s Enlightenment Team, I was a little concerned that I wouldn’t be able to represent their product since I am not much of a tea drinker, but  I never shy away from trying new things and expanding the horizons of my palate, so I accepted their offer.  My latest shipment included 4 different types of green tea called U-Matcha.  If you frequent coffee shops, I have been told that you can find these tasty teas on many menus.  One of my fellow Enlightenment Team members, Marina Delio of The Yummy Mummy Kitchen created a delicious looking Green Tea Latte as well as a Detox Iced Green Tea, which I am sure would be more than beneficial to help cleanse out some of that “liquid crack” I consume all day, but I decided to go a little different route and use the U-Matcha powder in a recipe rather than a drink.  I picked up some lobster tails at the store the other day that were on sale for $3.99!!!!!! each and decided that would be the ingredient to which I based my tea recipe around.

I wasn’t exactly sure where I was going with it when I got started, but decided to broil the lobster first and go from there.   I LOVE grilled lobster tails (see a fun recipe here), but since Winter seems to be never ending this year, I just heated up the ole broiler and popped them in the oven.  I picked up some tasty Artisan lettuce at the store and always keep fresh tomatoes on hand, so making a lobster salad seemed like the best plan, but what is salad without dressing?  It’s kind of like a cracker without any cheese, so I decided to use the Yuzu U-Matcha tea which has bold citrus flavors and make a vinaigrette for the salad.  It was quite the experiment to get the flavors just right because I didn’t want one component to overpower the other, so I just added a little here and a little there and I think it came out “real nice”!!! You can use other powdered green tea for this recipe and just add a little lemon, but I definitely think you should give these teas a try to cook with or drink and if you order by Friday, March 29th, you will receive a free electric matcha frother (see below for code and details).

Lobster Salad with Umatcha Green Tea Citrus Dressing

Ingredients

  • 4 lobster tails
  • 1/2 teaspoon Smart Balance Spread
  • Salt & Pepper
  • Paprika
  • 1/4 cup sweet corn, cooked
  • 1/4 cup sweet yellow cherry tomatoes, chopped
  • 2 tablespoon green onions, sliced
  • For the Dressing
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon white wine vinegar
  • 1 teaspoon The Republic of Tea U*matcha Yuzu
  • 1/2 teaspoon soy sauce
  • 1/2 teaspoon orange juice
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon sugar
  • Salt & Pepper to taste

Instructions

    For the Lobster
  1. Preheat the broiler.
  2. Place lobster tails on a baking sheet. With a sharp knife or kitchen shears, carefully cut top side of lobster shells lengthwise. Pull apart shells slightly, and season meat with equal amounts butter, paprika, salt, and white pepper.
  3. Broil lobster tails until lightly browned and lobster meat is opaque, about 5 to 10 minutes.
  4. For the Umatcha Green Tea Citrus Dressing
  5. In a small bowl, whisk all ingredients together. Pour over lobster mixture. Serve mixture with red leaf lettuce as lettuce wraps or salad.
