BMC – Shrimp Pasta with Leeks & Fennel

So, it’s been a minute since I have posted an official “Busy Mom Challenge” meal. ┬áNot only can you make this pasta dish in less than 30 minutes, it is also light and healthy.

Shrimp Pasta with Leeks & Fennel

Prep Time: 10 minutes

Cook Time: 15 minutes

Total Time: 25 minutes

Yield: 4 servings


  • 1 fennel bulb, sliced
  • 1 green onion, sliced (white & green part)
  • 1 shallot, chopped
  • 1 leek, sliced (white & green part)
  • 2 garlic cloves, minced
  • 1 cup white wine
  • 1 tablespoon Smart Balance Spread
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion salt
  • 1/2 teaspoon lemon pepper
  • 1 pound Ronzoni Smart Taste Angel Hair Pasta


  1. In a saute pan over medium heat, add 1 teaspoon extra virgin olive oil and saute sliced fennel, leek, onion, shallot and garlic until tender about 10 minutes.
  2. Add wine and butter and simmer to reduce. Cook pasta according to directions.
  3. Remove tails from shrimp and cut in half. Add shrimp and pasta to onion mixture and toss to coat and heat through.
  4. Top with Parmesan cheese and serve.
