Spinach Artichoke Flatbread

If you’re hungry and you don’t feel like cooking, chances are if you call me I will make you some food…….at least that’s how my friends feel.  And you know what?! I love it!  I love when the girls come over, pour a glass of wine, take a seat at the table and wait for me to feed them.  A few weeks ago while the boys were playing golf, my friend Mary came over and we made flatbreads.  I love to cook for my friends, but I also love to cook with my friends.  Too bad for those husbands playing golf, they could have had a yummy lunch instead.

Spinach Artichoke Flatbread


  • 1/2 cup cup fresh spinach
  • 1 teaspoon extra virgin olive oil
  • 1 flatbread round (found in Walmart bakery section)
  • 1 teaspoon extra virgin olive oil
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon Italian seasoning
  • salt & pepper
  • 2 oz fresh whole milk mozarella, sliced
  • 1 ounce goat cheese crumbles
  • 2-3 artichoke heart quarters, cut into pieces


  1. In a saute pan over medium heat, heat olive oil and add spinach. Cook about 2 minutes or until slightly wilted.
  2. Heat oven to 350 degrees F. Brush one side of flatbread with 1/2 teaspoon olive oil. Sprinkle garlic powder, italian seasoning, salt & pepper over flatbread. Add mozarella, spinach and artichoke hearts. Sprinkle with goat cheese crumbles. Pour 1/2 teaspoon olive oil over flatbread.
  3. Place flatbread on a cookie sheet and bake for 20 minutes or until cheese is melted.
