Holiday Salad with Champagne Vinaigrette

A dinner party’s delight, this spinach salad with a champagne vinaigrette will add festive color to your menu. It can be the light start to your progressively heavier dinner lineup or can be served for a ladies lunch followed by grilled fish and seasonal vegetables. Whatever the case, your table will be sad without this beaut! Pour a glass of Pomegranate Bellini for your guests and ‘erbody’s happy!!

Holiday Salad with Champagne Vinaigrette

Ingredients

1 bag fresh baby spinach, stems removed
Seeds of one Pomegranate, for garnish
Champagne Vinaigrette

For the Champagne Vinaigrette

1 teaspoon dijon mustard
3 tablespoons champagne vinegar
1-2 garlic cloves minced
1 tablespoon fresh lemon juice
1/2 cup extra virgin olive oil
Kosher salt & fresh ground black pepper to taste

Instructions

In a small glass bowl, whisk together mustard, vinegar, garlic and lemon juice. Slowly add olive oil and whisk to emulsify. This can also be done in the food processor.
Place spinach on plates, top with pomegranate seeds and pour dressing over salad. Or place spinach in a large bowl, toss with salad dressing and top with pomegranate seeds.
