Dutch Oven Slow Cooked Pulled Pork Loin

pulled pork

Stuffed pig! That is pretty much what the holidays make me feel like.  Self will, be gone and Stretchy Pants, get ready for action.  My Christmas countdown also contains a bit of excitement for the countdown until the holiday excuse for overindulgence ends and I can get back on track with my normal daily food guilt, but it is certainly fun while it lasts.  Speaking of swine and Lycra, this slow cooked pulled pork loin will make your taste buds feeling like they are in hog heaven, but will send those leggings back where they belong to fat pants hell!! While it takes a little time to cook, this is one of the easiest main dishes I have ever made.  The meat is so moist and tender and the juices left in the dutch oven are more than sufficient to finish off the dish, but adding a little barbecue sauce still keeps this a light and healthy meal.  Your man not on board for the New Year slim down? No worries, with this dish he will be more than satisfied because while it has all the flavor and composition of heavy barbecue, the lean cut of meat will keep your healthy plan in action.
