Black Friday……I’d like to call it “Out of the Black Friday” because after all the food I consumed yesterday I definitely don’t feel in the black anymore. With all the leftovers in the fridge, it is time to make some of that food work for you……in a lighter way. I know you have eggs in your fridge….who doesn’t?! Do you have leftover turkey? Do you have some of that tasty Sauteed Asparagus? And if you made the Butternut Squash Gratin you are certain to have some goat cheese left! So put it all together and what’ve you got? A delicious egg white omelette that you don’t need your stretchy pants for!!
Ingredients
- 3 egg whites
- Cooking Spray
- 1/4 cup turkey, chopped
- 1/4 cup Satueed Asparagus, cut into pieces
- 2 oz shredded low moisture part skim shredded mozarella cheese
- 1 oz goat cheese crumbles
Instructions
- Spray a medium saute pan with cooking spray and heat over medium heat. Add egg whites and rotate pan to evenly cover. Cook 1 1/2 to 2 minutes. Lift edges of egg and allow uncooked eggs to flow underneath. Add turkey, asparagus, mozarella and goat cheese on one side. Let cook 1 more minute. Fold side of egg without filling over on top of filling and slide onto plate to serve.
