Leaves were falling, just like embers,
In colors red and gold, they set us on fire

Fall, glorious Fall!!! You have finally arrived. Cooler weather, beautiful leaves and who can argue that there is NO blue more beautiful than an October sky. The food is warmer, a little richer (as best told to me by my pants this morning), and a lot more about comfort! However, I want to be “comfort”able in my clothes and not just barely fitting into them in the morning and then busting out of them by the end of the day (like today thanks to a little too much beer cheese dip this weekend and not enough time on the ole E-Spinner), so my comfort food certainly has to be heart warming and make my belly happy, but will hopefully keep the lycra count in my clothes at 2%or less. There really isn’t anything cute about frog hopping around your bathroom floor to stretch your pants out and wondering if maybe you washed them on hot or your husband accidentally put them in the dryer.
I really love everything about Fall, but shorter days make me feel like I am in a race against the clock to get dinner prepared only to find that we are washing dishes by 6:30; however, now that TV has finally improved, I really enjoy a quick and easy dinner and an assumed position on the couch with primetime TV. This taco soup is a one-pot wonder that goes from stove to table in 30 minutes and certainly won’t leave the metal tangs of my pants zipper hanging on for dear life.
