I was in the store recently stocking up for our specialty cheese addiction. Havarti, muenster, marscapone, mozarella, gruyere, goat……not exactly heart healthy, but, boy, do we love some cheese!! At night our amuse generally involves one of these yummy cheeses and then I try to lighten up a bit for dinner, but don’t usually move onto dessert until I discovered these caramel crisps hovering above the cheese at the store like a little dessert angel for crazy calorie counters like me. I had no idea what I was going to do with them, but they HAD to go in my cart.
We just recently enjoyed our second annual family Labor Day Lake Weekend. Hurricane Isaac didn’t really want anyone to spend a sunny weekend on the lake, so we spent most of our time trying to keep 3 kids (well, technically more if you count bored husbands) entertained at the lake house. I was a little thrilled because I had nearly two full days to just create in the kitchen. I cleared a lot of stuff out of the pantry and the refrigerator to bring as experimental ingredients including the caramel crisps, some marscapone, pecans, chocolate chips and what was left of the Cinnamon Cream wedges from The Laughing Cow sample pack I received. What was created from this experiment was a decadent, tasty, de”light”ful dessert or sweet snack that is low on calories, but big on taste. Six of these yummy rounds only depletes your calorie allowance by about 150 calories. I can’t give you the exact amount, but partnering the crisps with the low calorie cinnamon cream wedges mixed with a small amount of marscapone cheese and drizzled with the smallest amount of chocolate hits record highs on the sweet scale, while staying in the mid-lows on the guilt scale. Take that, Isaac, at least our lake weekend wasn’t a total wash!
