Fast and easy is not always something that we associate with gourmet and this easy chicken salad melt may just be more resourceful than anything else, but when I am in a hurry in the mornings it is always great to keep things on hand that are easy to make for lunch. I can’t remember where I saw it first, possibly Hungry Girl, but I started making quick low-calorie chicken salad by combining a can of chicken with several wedges of Laughing Cow Light Garlic & Herb Cheese. Those two ingredients with a slight sprinkle of celery salt, lemon pepper, salt & pepper make for a pretty tasty chicken salad. I know, I know, good old-fashioned homemade chicken salad with celery or grapes and onions is definitely my chicken salad of choice, but this one ain’t so bad (sorry, Mom).
I love a chicken salad melt as much as the next Southern girl, but when my husband was on his crazy P90x P60x spell, I stopped eating bread (mostly) and haven’t missed it much, but it does make lunch choices a little difficult. No, I do not claim to have a gluten-intolerance, but for my body it works and I find my carbs and fiber in other things. Anyway, back to the melt. I guess you can call it a “Naked Chicken Salad Melt”. I stack a LARGE amount of chicken salad on fresh sliced tomato, top it with a little cheese and broil for about 3 minutes or until the cheese is melted. This is perfect for a light lunch or is easy enough that you can make it quickly as a pre-meal snack for your girlfriends. Mine certainly expect an amouce bouche when they come over for dinner, so it’s great to just keep a bowl of the chicken salad in the fridge and in about 5 minutes time you are happily back to cooking while your guests quietly and patiently (yeah right) wait for the gourmet masterpiece.
