I’m so happy for our friends the Beardens. They have just moved into a new house that will be a perfect fit for their adorable family, so this post is certainly a nod to their new crib. I know that I have mentioned before that I love friends who share a love for cooking and drinking wine and Rob & Shelly no doubt fit that bill!! Shelly is an EXCELLENT cook and has so much natural talent in the kitchen that it makes my attempts at gourmet cooking seem elementary. Recently while Hunter was away at Cowboy Camp at my in-laws ranch in Texas, I hung out with their family, because when your own kids are out of town the logical thing to do is to go hang out with your friends who still have their children in-tow. Drew was playing golf and we had just eaten a late brunch at Noshville so I wasn’t super hungry, not to mention it was like 6,000 degrees outside, but there are a few foods that no matter the diet, the day, or the temperature that I have ZERO willpower against. Just in case you’re curious, I will give you the rundown. I haven’t met a hashbrown casserole that I’ve ever been mad at. Sausage cheese balls…..yes, please. Rotel cheese dip – you betcha! Pizza…….hell to the yeah, so when Shelly said “how about some grilled pizza?”, I was 100% on board.
After browning the sausage, and prepping the other toppings, she fired up the grill like a true professional and then the yumminess commenced. I know we all have our “go-to” meals and this seems to be one for the Bearden family, so they have definitely perfected their process. Naan is the crust of choice and I can’t argue there. Flavorful, crispy and all around tasty! She also found these really neat roll-out sheets of fresh mozarella that are the perfect size for individual pizzas. I’m pretty sure their new house has a grill tied right to the gas line, so I’m also pretty sure that I will be setting up camp at their house again sans child or not and pull up a chair for some more DELICIOUS meals at Shelly’s table!!
- 1 package naan bread (should be 2 naans)
- 4 tbsp olive oil
- 1/2 lb cooked Italian sausage
- 4-5 ripe Roma tomatoes, chopped
- 2 sheets fresh mozerella
- 1/2 cup fresh basil
- 2 cups fresh Arugula
- Salt & pepper
- Heat grill to medium-high heat. Brush naan with olive oil. Place naan on grill. Grill 1-2 minutes per side. Layer with mozarella, Italian sausage, arugula and basil. Cover and cook 5-6 minutes. Add tomatoes. Grill additional 2-3 minutes. Drizzle with remaining olive oil and season with salt and pepper. Serve hot.
