“Millions of peaches, peaches for me! Millions of peaches, peaches for free.” Literally free peaches from my sister’s neighbor provided the inspiration and, of course, main ingredient for this dish. For our Father’s Day Feast, Beth and I had it all planned out, but left out an important course – dessert. Dessert is sort of an afterthought at my house because my husband has a very bizarre disdain for anything whipped, which inconveniently is typically the finishing touch to any summer dessert, so it doesn’t leave many options other than ice cream and cookies.
I LOVE hot peach cobbler with a big scoop of vanilla bean ice cream, but we wanted to keep our healthy meal in check and not ruin it with a buttery, moist, sweet, decadent dessert like peach cobbler, so we came up with a somewhat deconstructed or “naked” version by grilling the peaches brushed with melted Smart Balance, brown sugar and cinnamon/nutmeg and serving them hot with Breyer’s no sugar added vanilla bean frozen yogurt. The end result was delicious and not too heavy after a big meal!!!
“Millions of Peaches, Peaches for Free” Grilled Summer Peaches
- 5-6 large ripe peaches, halved and pitted
- 2 tbsp Smart Balance Light Spread, melted
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 2 tbsp Splenda Brown Sugar
- Breyer’s No Sugar Added Vanilla Bean Frozen Yogurt
In a small bowl, combine melted Smart Balance, cinnamon, nutmeg & brown sugar. Halve peaches by slicing down the middle and remove pits. If the flesh under the pit is tough, you might need to cut it out a bit. Heat the grill to medium-high heat. Brush the flesh side of the peach halves with melted mixtures.
Grill flesh side down 3-4 minutes. Brush skin side with mixture and move peaches skin-side down to indirect heat. Brush flesh side again with mixture. Cover grill and cook until fruit is tender – 10-15 minutes. Serve immediately with frozen yogurt.
