NOTHING says Summer like a fired up grill, a glass of wine, and a great group of friends. Next time you are invited to a barbeque, bring along this DELICOUS & light chicken dish. Either baked in the oven or thrown on the grill, you will find lots of flavor in this refreshing dish, so “just sit back and unwind cause it’s summer, summer, summertime”!!!
Zesty Lemon-Thyme Chicken
- 1 lb boneless, skinless chicken breasts
- 1 lemon, divided (1/2 sliced, 1/2 juiced)
- 6-8 sprigs fresh thyme
- 2 garlic cloves sliced
- 2 tbsp Worcestershire sauce
- 4 tbsp Low-Sodium Soy Sauce
- Kosher salt & pepper to taste
Thoroughly wash the chicken. Lay out chicken on a cutting board and make about 4-5 small slices in each breast. Stuff the sliced garlic cloves and about 1/2 of the thyme sprigs into the incisions of the chicken. Salt and pepper the chicken. Place chicken in a glass dish or large Ziploc bag. Mix Worcestershire, soy sauce and lemon juice in a bowl and pour over chicken. Allow chicken to marinate 2-3 hours. If baking the chicken, preheat oven to 375 degrees. Bake for approximately 20-25 minutes on a cast-iron grill pan. Lay lemon slices and thyme sprigs on chicken. When temperature reaches 165 degrees Farenheit remove chicken and cover loosely with foil and let sit for 5 minutes. If grilling, heat grill over medium-high heat. Cook until the internal temperature reaches 165 degrees. Wrap loosely in foil and let sit for 5 minutes.
