So, I get it, just because I enjoy cooking healthy doesn’t mean that I should force it on the rest of the world, in fact, I would rather keep it under wraps and perform a little trickery on the people that come to my table. I am a true believer that tasty and healthy can go hand in hand, but the proof is in the pudding, so they say…….so it’s up to me to cook it and then tell. Remember that scene in Grumpy Old Men where John Gustafson talked to his dad about trying to be a little more healthy to which he replied “I’m 94 years old, what the hell do I care?” Well, I get it, so for that I am letting you in on a secret that can’t be shared until every last morsel has been devoured of this yummy breakfast casserole. Shhhhhhh………lean in close, it’s delicious and healthy! Who would have thought it?! You can put this one on for size…..literally !!!! And one last side note, this recipe is Hunter Bear Approved!!!! The sure sign of SUCCESS!!!
Mum’s the Word Breakfast Casserole
- 1/2 cup Baby Bella mushroom slices
- 2 green onions, sliced (green parts only)
- 1/2 cup vine ripe tomato, chopped
- 1/4 cup small yellow onion, chopped
- 2 tbsp minced garlic
- 1 cup crumbled turkey sausage (Jimmy Dean precooked is a great find)
- 1 cup egg whites
- 2 oz reduced fat feta cheese
- 1/4 cup part skim shredded mozarella cheese
- Salt & pepper to taste
- 2 tbsp fresh shredded parmesean cheese
Preheat oven to 375 degrees. Heat skillet over medium heat with vegetable oil cooking spray. Saute onion, tomatoes, green onion, mushrooms and garlic until tender. Combine eggs, feta & mozarella. Spray an 8×8 glass baking dish with cooking spray. Spread vegetable mixture and sausage on bottom of dish. Pour egg mixture over sauteed vegetables and sausage. Bake for 25 minutes. Top with Parmesean cheese and return to oven. Bake additional 5-6 minutes or until cheese is melted. Serves 4.
